Here are some pics of the meat I've been canning. I had a leftover roast, a lot of taco meat, and decided to throw sloppy joe mix into the canning spurt.

I gotta admit, I'm a bad Mom. I'm vegetarian; I'm canning/drying/storing veg*n stuff. If there's a disaster, the family will have to eat MY food!
Canning meat has always scared me.
How do you have storage for so many jars? I thought I had lots of room but I've already run out.
Basement. Dad has 4 wonderful floor-to-ceiling shelving units and shelves across one end. The only problem is they're full of stuff, most of which needs to be tossed.
I gotta say, if your boys like Sloppy Joes, canning that could be a great time saver for you. Say, after games, just pop open a jar and in minutes, dinner.
That batch I did was 2 packs, about 6 pounds, of burger, a green pepper, an onion and 2 cans of tomato paste. I simmered it for hours and processed it for 75 minutes. One jar didn't seal, and it was absolutely easy peasy to heat up and delicious. I was taken aback at how good it was.
